Hand Crafted Chef's Blends
Originally blended for salmon, but works exceptionally well on anything that comes out of the water. Fish, Shell Fish Shrimp, whatever. Great when added to tuna for tuna fish sandwiches.
First concocted for a new boneless rib recipe, we discovered it works well with any pork cut, be it chops, roasts, pulled perk, any ribs as a base seasoning. Really bring out the best of pork. NO SALT in this one!
This unique blend has neither salt or pepper in it and was made for a steak recipe our chef Bruce called Steak Cameron. He then discovered it is good for just about any red meat! Deer, Elk, Antelope, even lamb.
A special blend of herbs and spices for that rack of pork ribs that will make you the best rib cook around. Generously spice and pat in this blend and wrap those ribs in plastic wrap. Place them in the refrigerator for 2 or 3 days (turning once a day) and then slow cook these lip smackers to delicious tenderness. Also adds great flavor notes to other pork and beef dishes.
Originally made this for a neighbor for his smoked brisket. Slow roast your brisket, or smoke it like we do. It can also be used on pot roasts or other slow cooked meat to add a new level of flavor and intrigue to your recipe. Rub it on, wrap your meat in plastic wrap and allow the meat to soak it in for a few hours or overnight and slow cook away!
This one is designed for JUST hamburgers. Simply spice both sides of the burger just before you grill it. DO NOT let it sit on the patty to soak, we will guarantee it will spoil the burger, it will overtake it! Used properly, it will help you create the best burger ever!
Oh man is this a versatile spice! Use this on your salads after dressing it and you have taken your salad to another level. Use as a topping on your baked potatoes, add to a potato salad, sauteed, roasted or steamed vegetables. Great on garlic bread or pasta also. Be creative with this one.
After using several others' seasoning salt we knew there had to be a better seasoning salt out there, but there was not, so we took on the challenge, and here it is! This seasoning salt has more flavor than our competition and therefore less salt attacking your dish.
A specially developed spice blend for chicken. Roasted, fried, Barb-b-Qued or any cooking method. Not just for chicken though! It is great on anything with a wing!
Made especially and foremost for eggs, but has many other uses such as potato salad. Add a little to your scrambled eggs, omelettes, fried eggs, deviled eggs, any eggs, egg salad sandwiches! Just a little goes along way.
Now we are talking Italian! This will really level up your spaghetti sauce! Add it just to a can of diced tomatoes and viola, you have spaghetti or marinara sauce. Use it in your own recipe and make your life simple. It really is amazing!
This is a real step up from the run-of-the-mill Italian Spice Blends. Use in Italian dressing, add a little to our Sghetti Sauce Spice and even up that! Use it any where you use or want an Italian level in your cooking. It is simply wonderful.

Hand crafted, small batch unique Bar-b-Que sauces
This is the original Meat Paint our chef made in about 1972 when he was living in a cabin in the mountains of the great Pacific Northwest. It has a very distinctive flavor, not too sweet, not too spicy or tangy, but a great balance of the three with amazing spicing for a true friendly sauce for any meat. Use it as a finishing glaze, unless you like eating carbon.
Take the original flavor profile and add the smokiness and subtle heat of the Chipotle pepper and you have not a blazing hot sauce, but one with just the right amount of "kick" and lots of flavor. It gives you a great ride for your meal, but still allows the flavor of all the food to come through. One of our staff does not like , "hot and spicy", but loves this one!
All the flavor of the original, but with a great smokey note and flavor. We used Mesquite to avoid that sharp and bitter nose and taste that Hickory normally leaves. It also allows the flavor of your meat to shine through without masking it with heavy flavorings.
No Shade at Knight is a totally different approach to BBQ Sauce. It was especially developed for those who are allergic to tomatoes (a member of the Nightshade plant family). It has a nice tang from both apple cider and balsamic vinegar, a spicy brown mustard mixed with the fruitiness of pineapple juice, brown sugar and molasses, with secret spices. Thin enough to use as a marinade as well as a finishing glaze. Great on vegetables, too.

No, this is not a bottle of Bourbon! It is however the best dark robust pure maple syrup we have ever encountered. We have it bottled especially for us by a small Vermont Maple Orchard.
